Our love for all things pickled continues. One of the pickle presses has taken up permanent residency in the fridge holding anything from a batch of Japanese-style quick pickles to gherkin-style sweet cucumber pickles. One of our go-to recipes is this cucumber concoction. We have seen both Japanese and Chinese versions with the cucumbers being both smacked and smashed. Common elements are the sesame oil, garlic, ginger and chilli. All our pickle presses are sent out with a copy of our version of smashed cucumbers. We promise they are as simple as they look to make and surprisingly therapeutic.
