In February, we are still drinking our gin with citrus but going for a few herbs. Rosemary is a herb associated with love and the casting of love spells so, with Valentine's Day imminent, it seemed appropriate. I bashed up the rosemary in a mortar and pestle with a little sugar and salt. We used a blend of gin with extra citrus notes and poured it through a sieve containing the rosemary in order to pick up the flavours. The sieve in the gin kit was perfect for this. This was added to a glass with a handful of ice, slice of orange and a spring of rosemary to garnish.
