Yu Kurosaki is a young blacksmith based in Takefu, Echizen. He started his blacksmithing career in 2002 as an apprentice under Hiroshi Kato, the then owner of Kanehiro. In 2018 he was given the award of Traditional Japanese Craftsman, a very high accolade. We are very proud to sell his knives and think he is a real one to watch in the future.
This knife is a real rarity and absolutely beautiful, grab it while you can.
SHAPE: Sakimaru. Historically these are single bevelled and used in sushi but this enormous double bevel version would also be at home with meat.
STEEL: SG2 or R2. These are modern powder steels and as the name suggested are formed from mixture of powdered elements heated and pressed together. This allows for very precise recipes to be followed. The steels themselves have the ability to be hardened to above 65 on the Rockwell scale giving them excellent edge retention. This does come at a slight cost in that they can be slightly difficult to sharpen.
FINISH: Tsuchime. This is a hand hammered finish that is not only beautiful but also functional. The small depressions stop food sticking to the knife. This finishes comes in many different forms from the traditional round hammer marks to more modern patterns.
HANDLE: Octagonal Ebony wood handle with top and tail buffalo horn ferule with silver ring spacers. Comes with a Wenge wood saya.
