Deba knife, Shirogami 3, polished finish - Sakai Takayuki
This variant is currently sold out
Sakai Takayuki have a long and distinguished history of excellent knives. Using expertise that has been passed down generations, they have produced a superb hand-forged collection of shirogami 3 knives.
SHAPE: Deba. This is one of three quintessential single bevelled Japanese knives and is used for fish breakdown and preparation. Unlike a western filleting knife, this thing has no flex at all and is substantial in weight. This is to aid in bone cutting and allows the edge to be sharpened to hair popping levels while still giving it strength. Traditional Japanese knives, such as this, should exclusively be sharpened by hand on whetstones.
STEEL: Shirogami 3, the lowest carbon count out of the shirogami series. It has lower finished hardness which makes it tough ("less chippy") and easy to sharpen.
HANDLE: D-shaped Magnolia handle, plastic ferrule. (Right handed)
LENGTH: 120mm and 180mm
MAKER: Sakai Takayuki
BEST FOR: Fish prep.
