Next into the ageing barrel - rum!

A white rum was next into the barrel for ageing. Plantation three stars was recommended to us after a long conversation with the chap in the off licence. It is a white rum that is a blend of different rums from Barbados, Jamaica and Trinidad. We wanted to buy something at a reasonable price point that would work both neat and for daiquiris. It was pretty good neat to begin with but, now it has been in the barrel for just under a week, is starting to pick up some good flavours becoming more smokey and less sweet. 

We have been trying little sips of this batch as it ages by turning on the barrel tap while keeping the top bung in place. Another two days and it will be into a bottle and then straight over some ice!
