A excellent "do everything" chef's knife with a sort of santoku shape to it.
The K series of knives by Robert Herder utilise high carbon steel and hand ground convex edges resulting in a knife that has excellent sharpness and edge retention. The handles are slim, ergonomic and very comfortable in the hand.
SHAPE: Large chef's knife.
STEEL: Carbon steel. There is at least 1% carbon in these blades making them very easy to sharpen. The steel has been hardened 60/61.5 rockwell.
Stainless steel. The steel used is Molybdenum Vanadium and it contains 0.7% carbon and is hardened to 60 rockwell.
HANDLE: Plum wood
