It's all about the base

I don't want to jump the gun here but holidays are soon a-coming. Tis the time to get perma-squiffy on glasses of the cold fizzy stuff. Being the kinda girl who is never happier than with a glass of bubbles in one hand and a mouthful of something delicious in the other, I thought it was time to crack on with some canapés. I gotta get my hand in before December after all.

The base for all of these was a tortilla shell. This is constructed from your bog standard soft flour tortilla which is easily transformed into a crunchy shell to hold my selection of canapé goodies (full instructions in the canapé kit). Pretty time efficient as whipped up a batch in less than ten minutes.

First off, ceviche. A simple white fish, chilli and coriander mix, marinaded in lime briefly and spooned into the shell. 

Next up, the vegetarian option of a quick salsa. Pretty much anything would do - diced tomatoes, red onion, coriander and chilli or any variation. It looks a bit oddly like ketchup in the photo below, hence the large radish garnish.

Finally, salmon mousse topped with strips of leek (thanks to the negi cutter) and a blob of lumpfish caviar. Pretty good. The piping bag came into its own here. You don't need to fill the shell full so this helps avoid a smudgy mess.

 Three new canapés to kick off the festive season with... starting in November does present the possibility that I will peak way too early. Bring it on!
