A very unusual double bevel slicing knife.
SHAPE: Takobiki. This knife is generally a single bevel sushi knife used for octopus. This incarnation is double bevel so is suited for right or left handers.
STEEL: Shirogami (white) 2 steel. It is a reactive carbon steel which is easy to sharpen and holds an edge well. This steel is frequently paired with a kurouchi finish and is often chosen for traditional-style Japanese knives. Traditional Japanese knives, such as this, should exclusively be sharpened by hand on Whetstones.
FINISH: Damascus or Suminigashi. This is a folded metal finish that is then forged welded to the outside of the cutting steel.
HANDLE: D shaped Rosewood wood handle with buffalo horn ferrule.
