These knives offer exceptional performance for the price and some lovely head turning looks.

 

SHAPE: Sujihiki. A slicing knife similar to the yanagiba sushi knife but with a western double bevel. Very adept at cutting in one continuous movement causing minimal damage to the protein.

STEEL: SKD11. This is a Japanese high chromium and Carbon Tool Steel that is semi Stainless and virtually identical to American D2 steel. It’s easy to sharpen and has great edge retention

FINISH: Damascus

HANDLE: Western Pakkawood handle 

LENGTH: 270mm in length.

MAKER: Hokiyama hamono - Tosa, Japan
