A carving knife-shape constructed from VG10.
SHAPE: Slicer, or sujihiki. Used for carving.
STEEL: VG-10 stainless steel with damascus finish. VG-10 is a popular stainless steel, favoured by Japanese knife makers for its sharpness and edge retention. VG-10 is commonly used for damascus blades.
FINISH: Tsuchime - a traditional hand hammered finish. This effect not only looks great but also reduces contact with the blade, helping to ensure that whatever you are slicing doesn't stick.
HANDLE: Hinoki (Japanese cyprus) wood handle with ebony ferrule.

SAUNDERS SAYS: "Whatever you call this it is essentially a carving knife. We opted for a quite long knife at 240mm but think this is essential to utilise the cutting capability. These are designed to cut in one fluid movement, much like yanagiba with sushi, so the length is essential. Unlike a yanagiba these knives are double beveled making them suitable for both right and left handers and easier to sharpen. These are the pick of the bunch for me, if I had ordered more one would make its way into my quiver for sure."
