A heavyweight santoku made out of one of the best performing powder steels around.
SHAPE: Santoku. Named after the three best things to do with this knife - slicing, dicing and mincing. It is the classic veg prep knife with both good breadth and width.
STEEL: ZDP189. This crazy powder steel is made by Hitachi. It contains 3% carbon and 20% chromium which is fairly unusual to say the least. As one might expect with these numbers the steel is capable of insane hardness. Obviously this comes at a price, both cost wise and sharpenability.
FINISH: Migaki (polished).
HANDLE: Western Micarta handle with mosaic pin
