SHAPE: Santoku. Named after the three best things to do with this knife - slicing, dicing and mincing. It is the classic veg prep knife with both good breadth and width..
STEEL: SRS15. Powder steels are a relatively new breed of steels generally used in industrial applications where toughness is key. In the knife world this means better edge retention in the form of higher hardness but unlike traditional steels with these attributes they are a lot less chippy.
FINISH: Polished or migaki
HANDLE: D shaped rosewood handle with a pakkawood ferrule. Theoretically this is a right handers handle but I know loads of people who happily use them left handed.
LENGTH: 165mm in length.
MAKER: Akifusa - Sanjo, Japan
BEST FOR: Those who don't like sharpening. Having said this they are not the easiest knives to sharpen so it might make you hate the task even more.
