A really phenomenal package and a superb first knife.
SHAPE: Santoku. Named after the three best things to do with this knife - slicing, dicing and mincing. It is the classic veg prep knife with both good breadth and width.
STEEL: Chromax. This is a new Japanese semi stainless steel with 5% chromium and 1% carbon. It is much less reactive than a true carbon steel but has very similar sharpening properties. Edge retention is fantastic as the hardness is around 63 Rockwell.
FINISH: Migaki (polished).
HANDLE: Octagonal walnut Handle with a Pakkawood ferrrule.
LENGTH: 165mm in length.
