This range is pretty alternative. It’s the familiar double bevel shapes in single bevel format.
SHAPE: Single Bevel Santoku. Named after the three best things to do with this knife - slicing, dicing and mincing. It is great for veg prep knife with both good breadth and width. This knife should be exclusively sharpened on Whetstones.
STEEL: Aogami (blue paper) 2 steel. This is very similar to white paper steel but with tungsten and chromium added to it which helps with edge retention and slows down rusting.
FINISH: Kurouchi and Tsuchime. Kurouchi is the forge blackening left on from the manufacturing process. This helps inhibit rust. Tsuchime is a hammered finish which helps with food release.
