This range is pretty alternative. It’s the familiar double bevel shapes in single bevel format.
SHAPE: Petty. One of the smallest knife in the arsenal, this one excels at butchery tasks like taking off silver skin. Just dont try and cut bones with it. Additionally these knives should be exclusively sharpened on Whetstones.
STEEL: Aogami (blue paper) 2 steel. This is very similar to white paper steel but with tungsten and chromium added to it which helps with edge retention and slows down rusting.
FINISH: Kurouchi and Tsuchime. Kurouchi is the forge blackening left on from the manufacturing process. This helps inhibit rust. Tsuchime is a hammered finish which helps with food release.
