A great vegetable knife adept at push cutting.
SHAPE: Nakiri. A traditional shape used for cutting vegetables.
STEEL: The core steel is made from Shirogami 1 (white paper) carbon steel which has been clad with stainless steel. This means that only the exposed carbon steel along the edge will discolour.
FINISH: Nashi. This is the japanese word for a pear and this finish is said to look like the skin of a pear. Rough, with a matt finish ensuring vegetables are released during cutting.
HANDLE: Burnt chestnut with a plastic ferrule.
