Get your hands on a traditional knife with unusual blade patterning.
SHAPE: Nakiri. A traditional shape used for cutting vegetables.
STEEL: Shirogami (white paper) 1 steel. This steel has the highest amount of carbon out of the paper steels so will get crazy sharp easily. Due to the non stainless nature of this steel care must be taken to dry the knives properly after use. It is worth noting that this knife has been clad in stainless steel meaning only the exposed core edge will discolour making maintenance a lot easier.
FINISH: Tsuchime. This is a hand hammered finish that is not only beautiful but also functional. The small depressions stop food sticking to the knife. This finishes comes in many different forms from the traditional round hammer marks to more modern patterns.
HANDLE: Octagonal walnut handle with a pakkawood ferrule.
BLADE LENGTH: 165mm.
MAKER: Yoshimune. From Kawamura Hamono in Sanjo, Niigata.
BEST FOR: A great mix of traditional and distinctive knife styling with a tall profile.
SAUNDERS SAYS: "With the distinctive hammer pattern, this knife combines a more traditional handle with an unusual blade finish. Shirogami 1 sharpens like a dream while the stainless cladding is more forgiving."
These knives are hand-forged so there may be slight variations in measurements and finishes.
