A dam fine blade with a very comfortable handle. 

 

SHAPE: Santoku. While this isn't called a santoku, it is to all intents and purposes one - i.e. good at everything.

STEEL: Carbon steel. This steel has a minimum of 1% carbon in it and has been hardened to 60 rockwell. This makes it cable of getting a screaming sharp edge and keeping it. These knives need to be kept dry and oiled when not in use for extended periods. Overtime they will form a patina which is a dark oxidized layer over the blade.

FINISH: Polished or blue glazed. This is a process seldom seen in Solingen today. It involves smoothing or polishing the blade surface using using progressively finer compounds. This creates a very smooth feeling blade while also helping with rust prevention.
