Kiritsuke Petty knife, Aogami Super with stainless steel cladding, tsuchime finish - Nigara
This variant is currently sold out
Nigara Hamono has an excellent reputation for creating one of a kind knives. We are very excited to be stocking these knives. In the words of me ‘they are well nice.’
SHAPE: Petty. One of the smallest knives in a chef's arsenal and good for well small things.
STEEL: Aogami (blue paper) 2 steel. This is very similar to white paper steel but with tungsten and chromium added to it which helps with edge retention and slows down rusting. This steels differs from Blue 1 in its carbon content, Blue 2 being slightly less. Due to the non stainless nature of this steel care must be taken to dry the knives properly after use. It is worth noting that this knife has been clad in stainless steel meaning only the exposed core edge will discolour making maintenance a lot easier.
FINISH: Tsuchime. This is a hand hammered finish that is not only beautiful but also functional. The small depressions stop food sticking to the knife. This finishes comes in many different forms from the traditional round hammer marks to more modern patterns.
HANDLE: Octagonal Teak handle with a Buffalo horn ferrule
LENGTH: 120 or 150mm in length.
MAKER: Nigara Hamono - Japan
BEST FOR: Top of the line knives in crazy steels.
SAUNDERS SAYS: “Blimey these are all flipping lovely.”
These knives are hand-forged so there may be slight variations in measurements and finishes.
