A smoker should be at the heart of everybody’s cooking arsenal. Especially if you can spend inappropriate amounts of time in the kitchen or other well ventilated room. Venture beyond the classic hot smoked salmon to duck, pork, mackerel or prawns. 

Saunders says:

"My first foray into the smoking world (this isn’t taking into account the sub-16 roll up I had in the world's dodgiest pub in Shrewsbury) was a rather rudimentary Quality Street tin and chicken wire contraption that I filled with a lump of salmon. This had all kinds of problems but mainly buckling under heat resulting in the kitchen smelling like a kipper had immolated itself using pine as tinder. A better solution had to be found as I love smoked food. Japan - as it has done many times before - presented the answer."

We have chosen a smoker with a simple, easy to construct box design that will sit on top of a BBQ or stove but importantly also has enough internal space to smoke a decent quantity of food. It is solidly constructed but can also be easily disassembled for storage. 

This smoker is primarily set up for hot smoking whereby the smoke imparts flavour rather than preservative qualities. We have successfully hot smoked prawns, salmon and am looking at doing some tea smoked chicken breast this weekend. As soon as the winter prevails I will have my cold smoking hat on and will be blogging away.

The smoker measures 22cm by 41cm by 19cm by when constructed. It has a removable lid and a front door with latch. Inside there are two removable wire shelves, three meat hooks and a circular tray for charcoal. Simply fill the circular tray with sawdust or wood chips, place atop a heat source and get smoking.
