SHAPE: Gyuto. Literally translates as "cow sword", this is Japan's answer to the western chef knife. 

STEEL: SKD11. This is a Japanese high chromium and Carbon Tool Steel that is semi Stainless and virtually identical to American D2 steel. It’s easy to sharpen and has great edge retention

FINISH: Damascus

HANDLE: Western Pakkawood handle 

LENGTH: 210mm or 240mm in length.

MAKER: Hokiyama hamono - Tosa, Japan
