Goko Hamono is one of the last remaining forges left in the Tokyo area. It’s a family business that has been operational for around 30 years and in this time they have gained an excellent reputation for their outstanding work.
SHAPE: Gyuto. Japan's answer to the chef's knife with a thinner profile. Gyuto translates to cow sword.
STEEL: Shirogami (white paper) 1 steel. This steel has the highest amount of carbon out of the paper steels so will get crazy sharp easily. Due to the non stainless nature of this steel care must be taken to dry the knives properly after use. Having said this it is worth noting that these knives are clad with stainless steel meaning only the core will discolour greatly reducing maintenance.
FINISH: Nashiji or pear skin finish. This matt and mottled finish helps with food release and looks very rustic.
HANDLE: Octagonal Teak handle with a buffalo horn ferrule.
