This gyuto from Yamawaki is a classic shape with an unusual finish.
SHAPE: Gyuto. Japan's answer to the chef's knife with a thinner profile.
STEEL: VG-10 stainless steel with damascus finish. VG-10 is a popular stainless steel, favoured by Japanese knife makers for its sharpness and edge retention. VG-10 is commonly used for damascus blades.
FINISH: Tsuchime - a traditional hand hammered finish. This effect not only looks great but also reduces contact with the blade, helping to ensure that whatever you are slicing doesn't stick.
HANDLE: Hinoki (Japanese cyprus) wood handle with ebony ferrule.
LENGTH: 210mm or 240mm in length.
