Gyuto knife, damascus hammer finish - Yamawaki
This variant is currently sold out
This gyuto from Yamawaki is a classic shape with an unusual finish.
SHAPE: Gyuto. Japan's answer to the chef's knife with a thinner profile.
STEEL: VG-10 stainless steel with damascus finish. VG-10 is a popular stainless steel, favoured by Japanese knife makers for its sharpness and edge retention. VG-10 is commonly used for damascus blades.
FINISH: Tsuchime - a traditional hand hammered finish. This effect not only looks great but also reduces contact with the blade, helping to ensure that whatever you are slicing doesn't stick.
HANDLE: Hinoki (Japanese cyprus) wood handle with ebony ferrule.
LENGTH: 210mm or 240mm in length.
MAKER: Yamawaki, Sakai City, Japan
BEST FOR: Everything. The workhorse of the kitchen.
SAUNDERS SAYS: "For all those would-be iron chefs wanting to fling a big bit of steel around the kitchen, either length of this gyuto knife are the ones to go for. Aside from looking like a pro, the added length really helps when cutting large quantities of vegetables. If you have tried to make minestrone with a petty, you will understand. These knives are thin above the heel making cutting hard skinned veg much like, and as easy as, cutting a piece of cake."
BLADE LENGTH: 210mm (240mm)
OVERALL LENGTH: 360mm (400mm)
BLADE HEIGHT: 47mm (51mm)
THICKNESS AT HEEL: 2.4mm (2.2mm)
These knives are hand-forged so there may be slight variations in measurements and finishes.
