SHAPE: Santoku. Named after the three best things to do with this knife - slicing, dicing and mincing. It is the classic veg prep knife with both good breadth and width.
STEEL: High speed steel was once reserved for drill bits and powered cutting tools as it could handle higher temperatures without losing its temper. It is an incredibly hard steel hence the slight difficulties with sharpening but, once it is sharp, it has incredible edge retention.
FINISH: Polished with a sandblasted primary bevel.
HANDLE: Ho wood octagonal handle suitable for both right and left handed people with a buffalo horn ferrule.
