This petty comes in two sizes to suit all your needs.

SHAPE: Petty. The smallest knife in the collection and perfect for everyday slicing tasks.

STEEL: The core steel is made from Shirogami 1 (white paper) carbon steel which has been clad with stainless steel. This means that only the exposed carbon steel along the edge will discolour.

FINISH: Nashi. This is the Japanese word for a pear and this finish is said to look like the skin of a pear. Rough, with a matt finish ensuring vegetables are released during cutting.

HANDLE: Burnt chestnut with a plastic ferrule.

LENGTH: 120 or 150mm

MAKER: Goko, Kashiwa city, Japan

BEST FOR: Those wanting the performance of carbon steel but with the ease of use of stainless steel.

SAUNDERS SAYS: "I absolutely love the 120mm, it's quite tall for a petty which suits me."

The spec: 120mm (150mm)

BLADE LENGTH: 125mm (150mm)

OVERALL LENGTH: 240mm (277mm)

BLADE HEIGHT: 34mm (37mm)

THICKNESS AT HEEL: 3.1mm (3mm)

These knives are hand-forged so there may be slight variations in measurements and finishes.
