An excellent Chinese cleaver available in two types of steel.
SHAPE: Chinese cleaver. The do-everything Chinese cooking tool, just stick clear of bones and watch your fingers!
STEEL: One variety of these knives is made from high carbon steel so is easy to sharpen and stays sharp longer but will rust if left wet. The other is made from molybdenum vanadium steel which, while being slightly harder to sharpen, is a lot easier to look after day to day.
FINISH: Both are polished.
HANDLE: Rosewood type handle.
