Yu Kurosaki is a young master blacksmith based in Takefu, Echizen. He started his blacksmithing career in 2002 apprenticing under Hiroshi Kato, the then owner of Kanehiro. In 2018 he was given the award of Traditional Japanese Craftsman, a very high accolade. We are very proud to sell his knives and think he is a real one to watch.

SHAPE: Chinese Cleaver - This Japanese-made Chinese cleaver represents the very best of East Asia. If you are into the nakiri shape or prep a lot of veg, it is the perfect tool for you.

STEEL: Aogami (blue paper) super steel. This is very similar to white paper steel but with tungsten and chromium added to it which helps with edge retention and slows down rusting. The super part indicates the highest amount of carbon steel - at up to 1.5% - out of the blue series steels. This has then been hardened to 63-64 rockwell making it very hard and capable of retaining an edge for a very long time. The blue steel core has then been wrapped in stainless steel making maintenance easy.

FINISH: Kurouchi and tsuchime. The kurouchi finish is a scale left on from the forging process - this version is one of Kurosaki's signature finishes.

HANDLE: Octagonal wenge handle

LENGTH: 180mm in length.

MAKER: Yu Kurosaki - Takefu, Japan.

BEST FOR: Those looking for a range of knives that is as functional as it is beautiful.

SAUNDERS SAYS: “We meet Kurosaki San last time we were in Japan and we both immediately knew we wanted to sell his knives."

These knives are hand-forged so there may be slight variations in measurements and finishes.
