We love the first knife we worked on with Blenheim Forge so much that we decided to do another, this time a petty to help add to your kitchen knife arsenal. Perfect for paring or more intricate tasks.
We have gone for the standard petty shaped blade produced by Blenheim forge with a damascus cladding and aogami steel on the core. The handle is made the a salvaged groyne from the south coast.
The petty measures 130mm along the edge making it a great knife to work both in the hands and on the board.
These blades are made from aogami (blue paper steel). Blue paper steel is regarded by leading knife makers as superior to other steels thanks to its extremely fine grain structure as well as its lack of impurities. After a year of using the santoku, also made in aogami, it still sharpens like a dream and hasn't got a chip in sight.
We recommend cleaning and drying the knife immediately after use and applying a light coat of oil if the blade is not used often. For best results, sharpen on a flat waterstone.
